
Under the guidance of our master French Cooper, our artisans take the finest tight grain Eastern European Oak, renowned for the sweetness of its tannins and vanilla aroma, and craft barrels to satisfy the most discerning winemakers distinctive style and taste. The flawless ancestral knowhow and slow chemistry between oak, fire and water allow perfect harmony with the expectations of master winemakers.
Oak is sourced from select forests in the Chernivets'ka and Volyns'ka regions of Ukraine. The Bolts are then taken to the Bohorodchany Cooperage at the foot of the Carpathian Mountains, where they are split and open air aged for a minimum of 24 months. The staves are then crafted into barrels over oak fed fire pots. No artificial products such as sealants or adhesives are used nor required in the manufacture. As a precaution all barrels are leak tested using natural spring water, before being plastic wrapped and packaged in special framework to enable safe and secure shipping.
A range of different sizes of barrels are available ranging from 50 to 600 Litres in capacity. However the most commonly produced and highest demand is for our 225 Litre Bordeaux and 228 Litre Burgundy barrels.

A range of distinct toasting profiles are available to complement a variety of wine maturation styles. Duration and temperature levels are customised to suit the toast type desired. Infrared heat sensors are employed to monitor the temperature throughout the toasting process to eliminate blistering. Standard House toasting levels such as Light, Medium Light, Medium, Medium Heavy and Heavy are available, or we can customise a toasting program to your personal specification. Traditionelle
A balanced technique which uses a moderate fire. The toasting starts off high then gradually tapers down. Good Vanilla aromas with fewer tannins.
Au Naturelle
A mild fire at a constant temperature over a short timeframe allows the wood to soften yet retain the essence of the oak.
Le Sommet
A moderate gentle fire over a long period with a strong burst of high heat at the end, giving a lush and elegant result with less tannin impact.
